  1. Place the two oatmeals in a medium sized saucepan, then add the salt, sugar substitute, and cinnamon. Add the water and stir to combine all the ingredients. Taste the water to make sure you have a good balance of sweet to salt to spicy tastes. Add a smidge more sugar substitute, salt, or cinnamon to taste.
  2. Turn heat on to medium and bring the oatmeal to a boil. Turn the heat down to low and, stirring often, cook the oatmeal until the water is absorbed and the oatmeal thickens, about 5 minutes. Taste a tiny bit of the steel cut oats, checking for tenderness. You’ll probably want to cook the mixture another 3-4 minutes to obtain a chewy tenderness to the bite.
  3. If you have fruit or berries to add to the oatmeal, stir it in now and let the fruit heat up just a bit before serving. Serve with additional sugar substitute, if desired, and milk, half & half, or cream.
